Could there be a more beautiful setting for a winery than the one former artist Bibi Graetz founded in the Tuscan town of Fiesole in 2000? Perched on hills overlooking Florence, Bibi Graetz specialises in red wines made from the Tuscany varieties of Sangiovese, Canaiolo and Colorino grapes. Some white wine is produced, from vineyards on the island of Isola del Giglio 8 miles from the Tuscan coast – a special place to Bibi from his childhood. Although a relative newcomer to winemaking, Bibi works with old vines if possible. The most well-known estate wines, the Bibi Graetz Testamatta and Colore, come from vines up to 120 years old, giving these wines great depth and soul. ‘Obsessional winemaking that bears results in the glass’, wrote Jane Anson of Bibi Graetz.
